Let's Make Spinach Cream Soup.

Here is the recipe for spinach cream soup.
Ingredients :

500g of Spinach

50g of butter
-
1 Onion chopped

2-3 Garlic cloves chopped

A small potato cut into small pieces

450 ml Vegetable stock/ chicken stock

600ml fresh milk
-
¼ tsp of grated lemon peel (lemon zest)

Salt as per your taste

Black pepper powder as per taste

2-3 tbsp of Fresh cream (optional)
Method :
First wash and clean the spinach leaves . Cut the washed spinach leaves into fairly large pieces.
Heat the butter in a large pot, add onions & garlic, fry them for 2-3 minutes. After that add the potato and let it fry for further about a minute or two. Now pour the vegetable/ chicken stock into and cover the lid, let it cook for 10- 15 minutes.
Add fresh milk and let it boil, then add ⅔ of spinach and grated lemon peels, cover the lid and stir from time to time while it is being cooked for about 10 -15 minutes.
Now turn off the stove, let the soup cool.
Add the rest of the spinach into it and mix them well in a blender to get a fine cream texture.
Pour the mixture into the pot you used previously and add salt and pepper as per your taste. You can adjust the thickness of the soup now by adding chicken/vegetable stock as your preference. Let it heat for about a minute and serve in soup bowl garnish with fresh cream.
Roasted bread is ideal to eat with this soup.
