Coconut stir fried Carrot and Eggs.

Stir fried coconut carrot and eggs can be eaten with rice and also it is  ideal as a sandwich filling. Carrots are rich in vitamins, minerals, and fiber. They are also a good source of antioxidants. They're a weight-loss-friendly food and have been linked to lower cholesterol levels and improved eye health. Coconuts are especially high in manganese, which is essential for bone health and the metabolism of carbohydrates, proteins, and cholesterol. They're also rich in copper and iron, which help form red blood cells, as well as selenium, an important antioxidant that protects your cells. 

Let’s see how to make Coconut stir-fried Carrot and Egg

Ingredients :

  • 2 medium carrots

  • 1 Medium onion chopped  

  • 1  Green chili minced  

  • 1 tsp od black pepper powder

  • ½ of turmeric powder 

  • 1 tsp of red chili pieces 

  • Salt as per your taste 

  •  ½ cup of grated coconut 

  • 1 tsp of mustard seed 

  • 2 tbsp of cooking oil

  • Curry leaves 

  • Pandon leaves 

  • 2 eggs 

Method : 

First, grate the washed and cleaned carrots. 

Break the two eggs into a small bowl and whisk well. Scramble them in a pan and keep it aside. 

Take a saucepan and heat some oil in it. When the oil heats up, add the onions, curry leaves, turmeric powder, a piece of a  pandan leaf, red chili pieces and temper for two minutes. When the onions turn golden add green chili and mustard seeds.  When mustard seeds pop up, add the grated carrots into it and mix well. Bring to a simmer and season with salt and black pepper powder. Next add  grated coconut and cook for another 3 minutes. Then mix the scrambled eggs with carrot - coconut mixture.  

Your coconut stir fried carrot and eggs are ready now. Instead of eggs you can add fried chicken pieces as well. If you want to make a vegetarian dish you can skip adding scrambled eggs.
