Sweet Corn Milk Rice

Corn is a starchy vegetable & a cereal grain that is rich in fiber, vitamins & minerals and has been eaten all over the world for centuries. It’s eaten as sweet corn, popcorn, tortillas, chips, cornmeal, oil, syrup and added to countless other foods and dishes. Whole corn is loaded with fiber and contains vitamin C, B vitamins, magnesium and potassium. Processed corn products are not as nutritious. One of those ways that corn can be added to other foods is Corn Milk rice. Which is similar to making Mung beans milk rice.
Just like making mung beans milk rice you should take kekulu rice for making Sweet corn milk rice since other rice varieties are not suitable for making milk rice.
Ingredients :

One sweet corn
-
One cup of rice
-
1 ½ cups of coconut milk

Salt as per your taste
Method :

Wash and clean the rice well before cooking.

Place the washed & cleaned rice in the rice cooker bowl and add water into it until water comes to the second link of the middle finger. (that’s how to measure the water level to cook rice)

Separate the seeds from the corn and cook them after cleaning well.

Mix salt with coconut milk. When the rice cooker turns to “warm mode” from “cook mode” pour the coconut milk into the cooked rice and then add boiled sweet corn seeds and mix it well.

Switch the rice cooker into the “cook mode” again.

Let it cook until the coconut milk is done.
