Curd rice

Curd rice is an Indian food. Instead of curd, yogurt is also suitable for making curd rice, therefore it can be also called ‘Yogurt rice’. Actually, curd is a good source of protein, antioxidants and Calcium. It also contains probiotics which aids digestion and making curd rice a light food. Dieticians & nutritionists also recommend curd rice as a healthy food, which is able to reduce belly fat quickly. Curd contributes to control cholesterol levels and high blood pressure, both beneficial to heart health. For these reasons it is better if you can incorporate curd rice/ yogurt rice into your daily diet.
Let’s see how to make curd rice now.
Ingredients :

½ cup of rice

½ cup of Curd

½ cup of fresh milk

1-2 tsps of butter
-
1-2 tbsps of Grated carrot
-
1 tbsp of chopped coriander leaves (optional)

2-3 Crushed cardamom seeds

Curry leaves
-
Pandan leaf
-
1-2 chopped green chillies
-
Black pepper powder as per your taste (optional)

Salt as per your taste

2-3 tbsp of Cooking Oil
-
1 tsp of mustard seeds
-
1 ½ tbsp of chopped cashew nuts
-
½ tsp of grated ginger
-
1 tsp of Undu seeds
Method :
First wash and clean rice well. Add a little more water and a piece of pandan leaf into the rice and let it cook in the rice cooker. While the rice is being cooked, add crushed cardamom seeds into fresh milk, then boil well. After boiling get rid of the cardamom seeds out of it.
When the rice is cooked take out the pandan leaf and mash the rice well. If you do not mash the rice, it will turn hard after adding curd. Next add butter & boiled fresh milk into it and mix well. If you like you can avoid adding butter and milk as well. Let it be cool completely then. Adding curd to hot rice makes it coagulate the curd.
Then add and mix the curd into the cool rice mixture until it gets consistent. After that you can add grated carrots, chopped coriander leaves and salt.
Next, heat the oil in a pan. Add mustard seed, chopped cashew nuts, Undu seeds, grated ginger, curry leaves and green chile into it and saute them until Undu seeds become golden.
Finally pour tempered mixture into the curd rice and stir well. Adjust salt if needed. If you like you can add chopped apples, pomegranate seeds, sultana (dried grapes) or chopped mango into the rice mixture as well.
Serve this curd rice with pickle, papadom, fried red chillies and vegetable salad.
