Let’s make a noodle soup with chicken and eggs for dinner

It is a common belief that we should eat breakfast as a king, lunch as a prince and dinner like a beggar in order to lead a healthy life. But actually with our hectic lifestyle we do the opposite. We get our breakfast as a beggar, lunch as a prince and the dinner, of course, as a king! Most of us (Sri lankans) get a heavy dinner. The reason is we are tired all day and are looking for a hot and tasty dinner on the table at night. That satisfies us. Rice & curry is our popular meal. We don’t get to eat a warm lunch and most of the time we eat the same for breakfast and lunch because we cook for both meals at home early in the morning and pack them to eat at the office. Sri Lankans don’t like to eat outside because of the safety of the foods. That's why we are looking for a warm and delicious dinner at night.
So, I am going to give a recipe for a soup and this soup is ideal for dinner. It is nutritious, delicious and easy to digest (not heavy). So you can have your dinner like a king without affecting your health negatively. My husband loves this soup. Main ingredients of this soup are chicken,potato and eggs but if you like you can add other vegetables like leeks, beans and carrots as well. According to this recipe you need two potatoes but if you add other vegetables add only one potato. This recipe is enough to serve two people so you can adjust it as you want. It is perfect if you can prepare toasted bread to enjoy this delicious dinner.
Ingredients :
- 2 potatoes
- 100 g of chicken (chopped)
- 2 eggs
- One noodles cake (small packet of noodles)
- Small ginger root (peeled and chopped)
- 3 garlic cloves chopped
- Turmeric (optional, it gives the colour)
- Black pepper (as per your taste)
- Chopped onion
- 1 pod of Green chili
- Salt as per your taste
- One cup of coconut milk
- Coconut oil/ vegetable oil/ sunflower oil (as your preference)
Method :
First boil the potatoes and chicken and keep the stock aside. You can add turmeric if you like. Add salt into the water when you boil potatoes & chicken. Boil noodles and eggs separately. Get some oil into a pan and fry the ginger, onions, garlic and green chilli. Add the boiled chicken and potato pieces into it. Now you can add black pepper. If you like you can smash the potatoes with a spoon but I prefer potato pieces so I didn't smash them. After that, pour the chicken stock into it and then add the noodles. Cut the boiled eggs into little pieces and add them into the soup. Finally pour the coconut milk and add salt as per your taste. Now your soup is ready!
