Carrot Ginger Detox Soup

I have uploaded the recipe for making Beet detox soup previously. Here I am going to present another detox soup recipe which is made with carrots and ginger. Ginger has a long history of using it as medicine. It has been used to improve digestion and reduce gas. Ginger is also popular as a spice due to its unique flavor.  If you want to know more about ginger, you can read the article I have previously written about the health benefits of ginger, which is under “Food & Nutrition'' title. Carrots are not only crunchy and delicious, but also a nutritious vegetable. Carrots are full of nutrients such as beta carotene, vitamin K, potassium, antioxidants and fiber. Both carrots and ginger have been linked with lower cholesterol levels. Therefore this soup is not delicious but also good for your health. You can prepare this soup within 30 minutes and can be served to 8 people (if you adhere to the recipe). Adjust the recipe as your preference. 

Ingredients :

  • 1 cup of chopped onions 

  • Salt as per your taste 

  • 2 tbsp of olive oil 

  • 1 tbsp of minced garlic 

  • 2 tbsp of peeled & minced ginger 

  • 1 medium size potato, peeled and chopped

  • 6 cups of chicken or vegetable stock 

  • 2 pounds of carrots, peeled and chopped 

  • 1 cup of yoghurt ( low fat yoghurt is preferred) 

  • 1 tsp of honey 

  • Freshly grounded black pepper as per your taste 


Method: 

Combine the olive oil and onions in a pot over medium heat. Sprinkle with salt and cook while stirring for about 10 mins until just starting to caramelize. 

Add the garlic and ginger and continue to cook, stirring and be careful not to burn the mixture. 

Add carrots, potato and the chicken or vegetable stock, bring to a simmer, cover and cook until carrots and potato become very tender. It will take 20 -25 minutes. Keep warm.  

Meanwhile in a small bowl, combine the yoghurt, honey and pepper. 

Process  the soup with a blender until it becomes very smooth.  Garnish with yoghurt mixture before serving.
