Sprouted mung beans salad

Mung beans are one of the best plant based protein sources. They contain some of those essential amino acids, like phenylalanine, leucine, isoleucine, valine, lysine, and arginine. Sprouting changes the nutrient composition of mung beans, they contain fewer calories and more free amino acids and antioxidants. Sprouted mung beans can also be eaten as a curry or soup. Here, I am going to tell you how to make sprouted mung bean salad.
Ingredients:

One cup of sprouted mung bean

Maldive fish powder (as per your taste, but this is optional)

One tomato, chopped

2-3 green chilies minced

50g of red onions chopped

1 ½ tablespoons of sesame oil

Lime juice as per your taste

1 teaspoons of roasted sesame seeds

2 cloves of grounded garlic
-
Salt as per your taste

Black pepper powder as per your taste
-
1 ½ tablespoons of soy sauce
-
¼ teaspoons of Sugar (optional)

Little bit of ginger minced (optional)
Method :
Wash the sprouted mung beans well. Boil some water and then add the sprouted beans into it and let it boil for 2-3 minutes. After that drain the water. Keep the boiled sprouted mung beans in a bowl and add maldive fish powder, green chilies, tomato, red onions, sesame seeds, garlic and ginger into it.
Mix soy sauce, sugar and lime juice in a separate bowl until sugar dissolves well. Then add this mixture into the sprouted mung beans with black pepper powder and salt.
Finally add sesame seed oil and mix everything together. You should be careful to not crush the beans when you mix them. Keep the mixture for 20 minutes before serving. Then enjoy this tasty salad.
If you like you can add grated carrots and suitable other vegetables as well.
