Finger millet cake/ Kurakkan cake

Have you heard about finger millet or kurakkan? The origin of Kurakkan is East Africa but today it is present in Sri Lanka and India. The scientific name of Finger millet is Eleusine coracana. Sri Lankans use Kurakkan to make Pittu, String hoppers, Kurakkan Roti, Kurakkan Thalapa. In Sri Lanka Kurakkan is grown in Anuradhapura, Badulla,Monaragala, Rathnapura, Hambantota, Kegalle, Jaffna and Nuwara-Eliya. 

Kurakkan has many health benefits. It is good for people with diabetes. It is Gluten free and good for weight loss. Kurakkan provides  serotonin which helps to calm your mind. There are many other health benefits of Kurakkan. I will present them in a different article soon. This article is about making cake from Kurakkan flour. 

Ingredients : 

  • 125 g of Kurakkan flour

  • 125 g of Margarine / butter 

  • 125 g of Powdered sugar 

  •  2 Eggs 

  • 1 ½  Teaspoons of baking powder 

  • 1  Teaspoons of Vanilla

Method :

The method of making Kurakkan cake is similar to making Butter cake.  Add butter into a bowl and beat well. Add powdered sugar into it and mix it with a beater. Add the  eggs one by one and beat well. Now it is time to add Kurakkan flour into the mixture. You should mix  Kurakkan flour, Vanilla and baking powder together before you mix it into the mixture. Lay oil papers in a tray and pour the mixture into it. Bake it at 250 oC for 30 minutes.
